Overhaul Documenation and Some Nodes

Restarted from an earlier commit to remove large video files
from the repo. Moved all videos to be hosted on imgur to keep
the size of the repo down. Had to roll back to earlier version
of the repo to cleanly remove video files without tinkering
with the whole git history.

• clean old docs and add new
• bump quarto version in docs workflow
• cleanup unused docs
