explain why dummy-er is needed in easy2use `'Eiffel' bundle example #79

Description

easy2use aims for demonstrate use cases as I understand, but in Eiffel bundle example, there is dummy-er service started between mongoDB and Vici, but I cannot find why this is needed

Motivation

improve documentation and give new member of community a good understanding of the use cases

Since VICI is no longer part of the Eiffel bundle it should be safe to remove the dummy ER from this bundle as well.
