Meta Issue for Model Info And Integration Bugs/Improvements

A series of issues which will be impacted/potentially solved by rethinking the approach to model information

• have to do with integration and models

• Bugs and deficiencies moreso than additions

• Allow to override endpoints by configuration  #2711

Solution

Plan and implement a new architecture that

• consolidates most all model info into one place
• leverages the type safety of e.g. zod
• eliminates manual upkeep of config_schema.json - makes config_schema.json a generated file based on an e.g. zod type
• makes request options, completion options, etc. much more reliable
