Create Mintlify docs

Is your feature request related to a problem? Please describe.
The problem is that our docs don't look modern and are not nicely synced with the rest of the docs in the READMEs of the repo.

Moving our documentation to Mintlify (or similar)

Describe alternatives you've considered
Docusaurus is the current solution. An alternative could be to improve the styling of the current documentation on Docusaurus.
