Ben's BBQ Sauce

  • 1 0.33L bottle of dark beer (Stout, Porter, etc)
  • 2 Tablespoons white wine / apple cider vinegar
  • 2 Tablespoons tomato paste
  • 1 cup tart berries (Currants/Johannisbeeren work well)
  • 1/4 cup sugar
  • 1 Tablespoon molassas
  • 1/2 teaspoon smokey paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 2 teaspoons ground mustard (sub with 1/4 cup yellow mustard for oven method)
  • 1/4 cup smoky bourbon/mezcal

Simmer 1 hour till thickend
