Improve accessibility of selected poll options

Take a look at the image below - the text is very hard to read.

Could the icon and text color be updated in this instance to have higher contrast against the background? (E.g. a white/light color)

This makes sense to add in a future release; it also looks wonky with Flarum's own Dark Mode enabled and especially so with hovering over the options:

Not ideal, but we can look into adding UI improvements in the future!
